Description

The man on the right is using a 'peel' to draw tins out of the oven. The man in the centre takes the tins as they reach the front of the oven and puts them on the table, removing the loaf as he does so. The third man stacks the loaves, greases the tins and, with assistance of a fourth man, not shown, removes the loaves to the bread room. The oven is a double-decker steam pipe oven and has a capacity of 80 four-pound loaves. This bakery produced 28,000lbs of bread with two platoons and supplies four Detail Issuing Depots.
