Preparing potatoes for dehydration
Description
Peeled and shredded potatoes are washed and strained before passing through a drying chamber to remove excess water. The potatoes are then evenly spread on racks and spend six and a half hours in the dehydrator which reduces 480lbs of potatoes to approximately 80lbs; an important saving when transporting to troops in forward areas, Cowra, New South Wales.
