Food preparation training notes relating to the Second World War service of 9375 Flight Sergeant John Tom Henry Grainger, Royal Australian Air Force (RAAF).
John Tom Henry Grainger enlisted in the RAAF in February 1940 and served as a cook. This file contains course notes produced by the William Angliss Food Trade School, Melbourne, for RAAF trainee chefs in 1941 and used by Grainger. The notes relate to subjects such as science of food, nutrition, butchery, elementary bacteriology, buying ingredients at a market, and the preparation of menus, meats, sauces, soups, fish, and sweet and savoury side dishes.
